Anise Seed, Ground

Anise Seed is a gray - brown oval seed from Pimpinella anisum, a plant in the parsley family. Anise Seed is also known to aid digestion and is used as a medicine in the Middle East. It has a licorice - like flavor and is related to caraway, cumin, dill, and fennel. Ground Anise is most popular in cakes, cookies, and sweet breads. Anise Meringue Kisses

3 Egg whites
1/8 tsp Cream of tartar
1/2 c Sugar
1 1/2 tsp Anise Seed, Ground
Beat egg whites until frothy.
Add cream of tartar and beat to soft peaks.
Gradually beat in sugar.
Continue beating until stiff and glossy.
Beat in anise.
Using pastry bag, pipe onto parchment-lined baking sheets.
Bake at 275 degrees F. 30 minutes.
