Fiesta Shrimp Cocktail


1 c Ketchup
1 tsp Chipotle Powder, Morita
1 Tbsp + 2 tsp Lime juice
1 Tbsp + 1 tsp Roasted Vegetable Base
1 Tbsp + 1 tsp Prepared Horseradish
2 Tbsp Cajun-Style Crawfish Base - L
2 qts Water
20 med. - lg. Shrimp, peeled and deveined
2 med. Haas Avocados, peeled and chopped
2 med. Cucumbers, peeled and chopped
3/4 c Celery Stalk Hearts, sliced
Fresh Cilantro

In small sauce pan, combine ketchup, lime juice, and chipotle powder over medium heat. Add Roasted Vegetable Base and combine until incorporated well. Remove from heat and add horseradish. Refrigerate until chilled.

Bring water to a boil and add crawfish base, mixing until dissolved. Bring back to a rapid boil and add shrimp. Cook 4-5 minutes or until shrimp are opaque and have floated to the surface. Shock shrimp in ice bath. In separate bowl, combine cucumber and celery. In stemmed cocktail glass, layer portions of celery and cucumber mixture with avocado. Top with cocktail sauce and arrangement of shrimp. Garnish with cilantro.
