Allspice, Ground

Allspice is a dried berrylike fruit of a West Indian allspice tree. It has a similar flavor to cinnamon, cloves, and nutmeg. Allspice is a popular spice for baking, desserts, fruit dishes, sweet potatoes, squash, and turnips.

Frosted Jam Cake

1 c Butter, softened
2 c Sugar
4 lg Eggs
2 c Jam (Blackberry is recommended)
3 c Unbleached flour
1 tsp Baking powder
1 tsp Baking soda
2 tsp Allspice, Ground
2 tsp Cinnamon, Ground
1 c Buttermilk
1 c Seedless raisins
2/3 c Chopped nuts
Preheat the oven to 350 degrees, then grease and flour two 3x9-inch cake pans.
Cream the butter and sugar until light then beat in the eggs and jam, blending well.
Sift the dry ingredients together and then add the dry ingredients, alternating with the buttermilk to the creamed mixture, blending well after each addition.
Stir in the raisins and nuts.
Pour the batter evenly into the prepared pans and bake for 35 to 45 minutes or until the cake tests done in the preheated oven.
Cool for 5 minutes on wire racks and turn out of the cake pans to cool to room temperature.
When cool, spread with the warm frosting.
