Crab Base

This paste with MSG has flecks of crabmeat and has a very rich and robust crab flavor. Good for crab soup or dip. Combine with cream cheese, sour cream, Florida Bay Seasoning and crabmeat for a tasty dip. Cooked Atlantic Rock Crab meat is listed as the first ingredient.

Crab Cioppino

2 Tbsp Olive oil
1 Onion, peeled and minced
2 cloves Garlic - minced
3 c Crab Base (prepared according to package)
1 c Chardonnay wine
1/2 can Tomato paste
2 tsp Marjoram, Whole, crumbled
2 tsp Basil, Whole
1 tsp Oregano, Whole
2 tsp Thyme, Whole
1/4 tsp Pepper, Ground White
1/4 tsp Pepper, Red Crushed
1/4 tsp Pepper, Cayenne
2 Dungeness crabs, cooked,cleaned and cracked
Parsley (to garnish)
Heat olive oil in 6-quart pan over medium high heat.
When oil ripples and is fragrant, add onion and garlic.
Saute until translucent.
Add spices, stir one minute until fragrant.
Add prepared Crab Base, wine and tomato paste, bring to a boil, stirring often.
Reduce heat and simmer 25 to 30 minutes to blend flavors.
Soup may be made ahead to this point.
Break Crabs apart and clean. Cut body in fourths and crack legs.
Add to hot soup and simmer until hot, about 7 - 10 minutes.
