Premium Vegetable Base

This smooth paste with no added MSG has a rich, sweet and savory mixed vegetable flavor. Vegetarian, no dairy whey included in the base. Excellent to enhance soups, sauces and broths. Salt listed as the first ingredient.

Vine Ripe Tomato

12 Vine ripe tomatoes
3 Tbsp Canola oil
1 Onion
3 Celery ribs
2 qts Premium Vegetable Base (prepared according to package)
2 c Non-dairy creamer
1 Tbsp Sea Salt, Fine Crystals
½ tsp Pepper, Ground Black
¼ c Water
2 Tbsp Arrowroot
Dash of Nutmeg, Ground
Pinch of Sage, Rubbed
2 Tbsp Basil, Whole
1 Bunch of parsley
In a large pot of boiling water, add tomatoes and par boil for 3 minutes; drain. Peel, seed and finely dice tomatoes. In a soup kettle on high heat, bring the oil up to temperature. Add fine diced onions and celery. Cook until translucent stirring regularly. Add Premium Vegetabel Base (prepared), chopped tomatoes, creamer, salt and pepper, bring to boil. Reduce heat to a simmer and cook for 1 hour. Whisk together water and arrowroot and drizzle into soup stirring continuously. Add nutmeg, sage and basil then simmer for 10 minutes. Finely chop parsley, add to soup and serve.
