Minestrone Napoli

½ lb Miniature ziti
1 lb Turkey sausage
1 Leek
1 Carrot
1 Parsnip
4 Redskin potatoes
4 Roma tomatoes
½ Stalk of celery
1 Green bell Pepper
1 Red Bell Pppper
¼ lb Italian green beans
4 Tbsp Olive oil
6 Garlic cloves
3 qts Turkey Base, Premium (prepared according to package)
1 Bay Leaves, Whole
1 Corn cob
1 Tbsp Sea Salt, Fine Crystals
1 Tbsp Marjoram, Whole
2 Tbsp Basil, Whole
Pinch of Sage, Rubbed
Dash of Nutmeg, Ground
1 Tbsp Savory Leaf
¼ lb Garbanzo Beans
1 Bunch of Chives
Cook off ziti, drain, cold-water rinse and reserve until the end of the recipe. Medium dice turkey sausage, leek, carrot, parsnip, red skin potatoes, Roma tomatoes, celery, bell peppers, and green beans all into uniform size. In a medium hot soup kettle caramelize the olive oil and minced garlic cloves together. Add the diced turkey sausage and vegetables to the caramelized garlic. Stir mixture on a regular basis on medium heat for 20 minutes. Pour Turkey Base (prepared) into soup kettle with the bay leaf and bring to a rapid boil on high heat. When boiling begins, reduce heat to a simmer. Cut kernels of corn off cob and add to soup with the sea salt, marjoram, basil, sage, nutmeg, savory and garbanzo's. Simmer for 40 minutes then add the chopped chives and cooked ziti. Simmer for 10 minutes stirring regularly and serve.
