Beef Flavored Gravy Mix, Premium

Beef Stroganoff


3 tsp Peppercorn Blend, Ground
2 lb Beef Tenderloin steaks, thinly sliced
2 Tbsp Olive oil
1/2 c Shallots - chopped
16 oz Cremini mushrooms, quartered
4 tsp Cognac
2 Tbsp Clarified butter
4 oz Premium Beef Flavored Gravy Mix
24 oz Water, warm
1 c Heavy cream, scalded
16 oz Wide egg noodles, cooked to al dente and lightly buttered
Fresh tarragon, coarsely chopped
Salt

Season beef with peppercorn blend and salt. Heat 1 tablespoon oil and 1 tablespoon butter in skillet over medium high heat. Cook steaks to desired doneness and finished in oven as needed. Transfer to plate to hold. Add remaining oil and butter to skillet. Saute shallots and mushrooms until mushrooms are softened. Deglaze pan with cognac.
In sauce pan, whisk gravy mix into warm water and bring to a light boil. Reduce heat and add cream. Bring back to a simmer. Add gravy to the skillet with mushrooms and stir until heated through. Spoon sauce over warm noodles and serve with sliced steak. Garnish with fresh tarragon.
