Creamy Manchego & Aged Cheddar Soup


4 quarts Water
2 3/4 Tbsp Roasted Beef Base
1 3/4 Tbsp Roasted Vegetable Base
22 oz. Cream Soup Base
1 qt 2% Milk, scalded
20 oz. Sharp Aged Cheddar Cheese, shredded
6 1/2 oz. Manchego Cheese, shredded
Heavy Cream
Fresh parsley, chopped

Bring water to a boil. Dissolve Roasted Beef and Roasted Vegetable Bases in water. Whisk Cream Soup Base into prepared broths. Bring to a boil while whisking continuously. Lower heat and adjust consistency with milk. Keep over low heat and add cheese. Stir until cheese completely melted. Garnish soup with cream and parsley.
