Very Berry Pork Tenderloin Salad


2 Tbsp Huckleberry Steak & Rib Rub
4 Tbsp Lemon Juice
1/4 cup Corn Oil
3 Tbsp Pure Maple Syrup
1 1/4 lb Pork Loin, trimmed, boneless
3 Tbsp Raspberry Vinegar
3 Tbsp Blueberry Jam
1/4 cup Fresh Blueberries
1 1/2 Tbsp Olive Oil
1 1/2 tsp Sugar
3 cups Radicchio, shredded
3 cups Endive Lettuce, shredded
Dried Blueberries and Cranberries
Goat cheese, crumbled
Butter Lettuce Leaves
Candied Pecan Halves

Prepare marinade by combining huckleberry rub, lemon juice, corn oil and maple syrup. Slice pork into 1-inch cutlets and marinate overnight. Preheat oven to 400°F. Sear cutlets on each side in skillet, then bake until cooked to desired doneness.

In blender, combine vinegar, jam, olive oil, fresh blueberries, and sugar. Blend on high until well combined. Toss radicchio and endive with 2 tablespoons dressing. To serve salad, arrange 1 cup radicchio and endive mixture on butter lettuce leaves. Top with 3 ounces of cutlets. Garnish with dried berries, goat cheese and candied pecans, with remaining dressing on the side
